Letter from Drew:
Thank you for considering entering our first Pro-Am competition! I just wanted to share a few notes about our brew system, method and other considerations.
We have a two vessel brewhouse (Mash/Lauter Tun & Kettle/Whirlpool) capable of single infusion mashing (no decoctions nor step mashing, unfortunately). Beers over 1.075 OG or so perform much better with an addition of flaked grains (up to 30% of the grist) and over 1.085 OG or so with some kind of simple sugar or syrup. Our water treatment capability consists of a carbon filter and salt/acid additions to the mash, so if you used RO water, we can’t replicate that.
We have no beer filter, but have good results with BioFine when we want a brite beer relatively quickly.
We will also have some of our house yeast cultures available:
English Ale – Whitbread and Burton strains alcohol tolerant up to 12% abv
Belgian Ale – Trappist and Saison strains alcohol tolerant up to at least 12% abv
Lager Blend – Pilsner and Bock type strains with unknown alcohol tolerance as we’ve only brewed up to 6.3% lagers so far, but I expect it to be able to hang with our other cultures once tested.
Once registration is complete we will send information about how to get your yeast.
We also have to factor in some economics as to our winner. By that I mean we probably won’t pick to brew a Saffron infused Tupelo Honey Braggot rested in new charred oak barrels with 8lbs/bbl Organic Galaxy hops, but we’d love to taste one!
Good luck and if you have further questions send to [email protected]
and I’ll do my best to answer!
Cheers and beers,
Brewmaster – Braindead Brewing
